Discernment in the Kitchen: Ditching Processed Lies for Christ-Centered, Nutrient-Dense Food

I remember when the U.S. government promoted margarine over butter and lard, demonized cholesterol, and pushed the infamous Food Pyramid that loaded carbs at the base while downplaying real fats. They encouraged hydrogenated vegetable oils full of harmful trans fats—now widely recognized as dangerous to heart health.

The government’s track record on nutrition isn’t great. They’re too intertwined with Big Pharma and Big Food, which is why we have the FDA in the first place. They’ve pushed processed foods and drugs that haven’t served us well.

That’s why I tell people the food I prepare for En-Joy Ministries’ Cooking for Christ truly has healing properties. It’s real, nutrient-dense nutrition made with Christ’s love—grown and raised right here on our small farm.

Today, I rendered some beautiful lard from leaf fat (the premium kidney fat) of pigs we raised ourselves on pasture. This isn’t the processed stuff—it’s pure, stable, chemical-free cooking fat.

Listen: the government lies to us daily about food and drugs. Why do you think diabetes, heart disease, and skyrocketing cholesterol levels are epidemic? And don’t get me started on the mRNA vaccines—I had discernment and didn’t take that poison.

Kristyn and I eat mostly from our farm: raised meats: pigs & lambs, vegetables, and eggs. Did you know that leaf lard from pasture-raised pigs is actually a nutrient powerhouse?

• It’s rich in Vitamin D (one of the best natural sources, thanks to pigs soaking up sunshine).

• High in heart-healthy monounsaturated fats like oleic acid (similar to olive oil).

You won’t hear this from most dietitians, doctors, the USDA, or the FDA—the system is tied to government funding and deep corruption.

Just look at these biscuits I made today: fluffy, flavorful, made with pure lard from our farm. Topped with delicious sausage gravy—full of deep, real flavors and made with love. My cooking nourishes body and soul. And the fried pork chops – Wowzers!
